This is such an easy recipe I’m ashamed to give it to you, but Deliverance asked and I am happy to oblige.
As with so many of the old fashioned recipes, the ingredients are few and easily what you have on hand.
Egg Custard Pie
Preheat oven to 425*
Make a crust for a 9” pie
Bake for 5 minutes only, just enough to set the crust.
For the filling:
4 eggs
½ cup sugar
1 teaspoon vanilla
¼ teaspoon salt
2 ¼ cups or 2 ½ cups milk, (for me it always depends on the size of the pie dish) but don’t use more than 2 ½ cups
I only use real vanilla and whole milk, if your going to use imitation vanilla and skim or 2% milk you are on your own, I don't even want to know about it. Yuk!
Beat the eggs with a fork until lemon colored (but not frothy). Stir in sugar, vanilla, salt. Then stir in milk gradually, mix it well.
Pour into the partially baked piecrust.
**If you want sprinkle with nutmeg or cinnamon.
Bake at 425* for 15 minutes, then reduce the oven temperature to 350*, bake 20 to 25 minutes until the knife inserted in center comes out clean.
Cool to room temperature before serving.
**If you want to make this a Coconut Custard Pie all you have to do is stir in ½ cup coconut before you bake it.
Refrigerate leftovers.
See, I told you it was simple and easy.
Update:
Since I wrote the post this morning I thought I would make another pie. My friend Bob had surgery to take a cyst/tumor that had grown on his face, unfortunately now half his face is paralyzed, including the ability to open and close his eye.
Being a vain fella, he has refused to let anyone see him, well, bullshit on that. I’ve seen enough stuff in my life that his little problem certainly won’t bother me. For crying out loud, when will people learn that what they look like or think they look like Does. Not. Matter. To. Me.
I like the fool just because he is Bob, my friend.
Anyways, he loves my Egg Custard Pie. I know beyond a shadow of a doubt he’ll open the door for this. Heh.

Sounds wonderful. Where I come from we call that a chess pie. My momma makes a chocolate version that is about the best thing you could put in your mouth. I plan on eating a whole one when I am home next week. Merry Christmas to you and yours...

Mine is almost exactly like that, but dogged if I'm going to pull that recipe out; I'd just have to make one! Egg custard pie is one of my favorite things in the whole world... what a comfort food! ;)

I'm a pretty darned good cook, but I'm not a baker. But, by golly, I'm gonna be a baker tomorrow! I'm even gonna grate my own nutmeg. Just hope I manage to NOT grate my knuckles in the process. heh

Believe it or not, I've never made a pie before. But I enjoy custard and this sounded so easy that even I couldn't mess it up. I made the coconut custard variation with a simple graham cracker crust and just tried my first slice. Delicious! I got started a little late for dessert but it'll be just as good for breakfast. Thanks for the recipe!

I tried your recipe, and made the egg cream pie. It tasted great, but didn't look so great. In the middle the custard did not swell up like the rest of the pie. I tried making another pie, still it was also sunk in the middle. Please help. What am I doing wrong?????
