Another simple recipe that’s good, especially when simple sounds like the most wonderful idea ever. Not a gourmet recipe for sure, but filling and good tasting.
Cornbread Casserole
1 small onion
1 lb. Ground beef or ground turkey
¼ cp picante
½ tsp garlic powder
½ tsp each salt and pepper
2 (6-8oz) pkgs. Cornbread mix
eggs
milk OR buttermilk
1 ½ cps grated cheddar
Spray a 9 X 13 pan with cooking spray
1.) Chop onion. Brown meat and onion in medium pan. Drain off grease.
2.) Add picante and seasonings to meat.
3.) Mix cornbread in large bowl with amount of eggs and milk package calls for.
4.) Pour more than half of the cornbread mixture into the pan.
5.) Place meat mixture evenly over cornbread. Top with 1 cup of cheddar.
6.) Pour remaining cornbread mixture over meat and top with rest of cheddar.
Bake 20 minutes (400) or until cornbread is lightly browned

I am so glad you two tried this. Couldn't of asked for more. I love it when people use my recipe's. It's so darn flattering when someone calls my food "comfort food".
